Ingredients:
- 4 boiled eggs, peeled and halved
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1/4 cup yogurt
- 1/4 cup cashew nuts (soaked in water for 30 minutes)
- 2 tablespoons oil or ghee
- 1 teaspoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
Heat oil or ghee in a pan over medium heat. Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add tomato puree and cook until the oil separates from the masala.
In a blender, make a smooth paste of soaked cashew nuts and yogurt. Add this paste to the pan and mix well.
Add red chili powder, turmeric powder, coriander powder, garam masala, and salt. Cook the masala until it thickens and the oil starts to separate.
Gently place the boiled egg halves into the gravy, ensuring they are coated well.
Add water to achieve the desired consistency of the gravy. Simmer for 5-7 minutes.
