Ingredients:
4boneless, skinless chicken breasts
Salt and pepper to taste
1 cup breadcrumbs
1 cup grated Parmesan cheese
2 eggs- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- Fresh basil for garnish (optional)
Instructions:
Preheat your oven to 400°F (200°C).
Season chicken breasts with salt and pepper.
In one bowl, beat the eggs. In another bowl, mix breadcrumbs and Parmesan cheese.
Dip each chicken breast into the egg, coating both sides, then into the breadcrumb mixture, pressing down to adhere the crumbs.
In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side or until golden brown.
Pour marinara sauce over each chicken breast, and sprinkle mozzarella cheese on top.
Transfer the skillet to the preheated oven and bake for about 20 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
Garnish with fresh basil if you like, and serve over pasta or with a side of your choice
