Tasty and healthy Vegetarian Chickpea Stir-Fry

Vegetarian Chickpea Stir-Fry: Ingredients:


  • 2 cups cooked chickpeas (canned or cooked from dry)
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots), chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 green onions, sliced
  • Sesame seeds for garnish
  • Cooked rice or noodles for serving

Instructions:

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic and ginger, and sauté for about 1 minute until fragrant.
  3. Add the mixed vegetables and stir-fry for 3-5 minutes until they start to soften.
  4. Add chickpeas to the skillet and stir-fry for an additional 2-3 minutes.
  5. In a small bowl, mix soy sauce and sesame oil. Pour over the stir-fry and toss to coat evenly.
  6. Stir in sliced green onions.
  7. Serve the chickpea stir-fry over cooked rice or noodles, and sprinkle with sesame seeds.
