Vegetarian Chickpea Stir-Fry: Ingredients:
- 2 cups cooked chickpeas (canned or cooked from dry)
- 2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots), chopped
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 green onions, sliced
- Sesame seeds for garnish
- Cooked rice or noodles for serving
Instructions:
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add minced garlic and ginger, and sauté for about 1 minute until fragrant.
- Add the mixed vegetables and stir-fry for 3-5 minutes until they start to soften.
- Add chickpeas to the skillet and stir-fry for an additional 2-3 minutes.
- In a small bowl, mix soy sauce and sesame oil. Pour over the stir-fry and toss to coat evenly.
- Stir in sliced green onions.
- Serve the chickpea stir-fry over cooked rice or noodles, and sprinkle with sesame seeds.
